Made from Tocai Friulano, Malvasia and Ribolla Giallo, sourced from 35-years-old vines grown in a 1.9ha vineyard in Farra d'Isonzo. The grapes are de-stemmed, softly pressed and slowly macerated. Must and skins are then fermented at a controlled temperature of 19-21°C for 20-25 days after which the juice is separated from the skins by part transfer into 225 liter barriques and part in 2000 liter oak casks, “sur lies”, stirred daily, for approximately 3 years. The cuvees are then transferred together in stainless steel tanks for another 2-3 months of ageing before being bottled. Groups of 500 bottles each are then placed into large chests and housed in thermally conditioned warehouses for successive ageing.
