Palate: Vinous, with notes of blackcurrant and red fruits, along with yellow and white cooked fruits. Dry and vibrant finish. About the wine: Grower Champagne governed by biodynamic farming. Pinot grown on Kimmeridgean soils. Ten percent of the base wine is vinified in barrel, with the end wine a blend of 3-4 vintages. 5 years on lees. Extra-Brut, with 4 g/l dosage, no filtration, no sulphur added since 2016. Disgorgement date is 14/09/20 as per engraving on the bottle. When to drink: Drink now or in the next 3-4 years. Service: 8 to 10 C degrees in a normal wine glass. Food match: Champagne is one of the most versatile wines with food.
