Of Dagueneau's great Pouilly Fuisses, the Silex is the most electric, mineral-infused wine, sourced from flint-ridden vineyards. Incredibly rare. It's a wine to challenge any existing preconceptions of Sauvignon Blanc - tightly wound, yet creamy and textured, with a panoply of exotic grass, floral and herb aromas. But it is only with time that its true greatness is revealed, probably a minimum of five years. They are exceptional if you are lucky enough to try them with 10-15 years under the belt.
