Les Châtillons is the most calcareous of Pierrick’s eight Villages sites. The parcel was planted in 1972-73 and makes for an elegant, long, especially mineral wine and for that reason he bottles it separately. Roughly 15% is aged in wood (both barriques and demi-muids) and this is blended with the steel-aged remainder. 'Oldest vines of the domaine, planted in 70 and 71 with a massale selection in Maligny – normally 30-45 hl/ha but over 50 in this vintage – on a Kimmerigian plateau, vinified like 1er crus so with 30% wood, part of that in large-formats. Normally bottled May of the following year.' Burgundy-report.com, Bill Nanson, January 2021.
