David and Naïma Didon have settled in an old farm in Chassey-le-Camp in the Côte Chalonnaise, where they cultivate just under two hectares of vineyards next to forests and completely free of surrounding vineyards and being concerned about the possible bad habits of their neighbours. This is an obvious advantage for Domaine Didon that are determined biodynamicists and do not compromise when it comes to their methods of cultivation. David works for Domaine de Montille in Volnay, where he is responsible for all vineyard work and has overseen the domaine’s conversion to biodynamics. The road to making wine under his own name came through David’s longstanding friendship with Julien Altaber and Dominique Derain in Saint-Aubin. The encounter with their wines opened his eyes to the fact that vinification without additives can produce wines of a very special character. Spontaneous fermentation, whole clusters, no additions at all, no fining or filtration and no use of new casks are just some of the parameters that help to create a small array of wines that are bright, refreshing and always vibrating with energy.
