The grapes are hand harvested, sorted followed by a slow pressing and a natural fermentation with indigenous yeasts. Ageing on lees in stainless-steel tanks for 12 months. No added winemaking producer even no sulphur during vinification. A small amount of sulphur is added before bottling yet the wines are clean and delicious. Light filtration.
