This wine is a co-fermentation of Pinot Noir and trousseau from the original walled vineyard of Clos Maire in Arbois. The grapes are directly de-stemmed in the vineyard manually via crible, and the berries arrive intact in the vat room for a semi-carbonic maceration which gives this wine a lot of freshness. Raised in old burgundy barrels and bottled without filtration, fining and a tiny splash of S02 on bottling.
