Tasting Notes: Fleshy, full, carried by an already seductive maturity. The young vines of the François Cotat estate fully express the limestone of Sancerre. Citrus takes on floral and linden touches. On the palate, the wine is dynamic and captivates us with its frank attack, its persistence on the citrus notes and above all its saline, appetizing finish. 

The Domain: There's Sauvignon Blanc, and then there's Sauvignon Blanc as imagined by François Cotat. Devotees can tell you that what happens in this modest cellar in Chavignol is one part winemaking, three parts magic. Suffice it to say that Cotat Sauvignon has to be tasted to be believed.
