Canonica farms one-and-a-half hectares of vines in the Paiagallo vineyard on the hill above Barolo. He and his family run a small agriturismo, and Canonica makes his wine in the cellars below. Everything here is traditional, and it's the integrity of this process that creates wines of both great breadth and intricate delicacy. Only a tiny number of bottles are produced each year, most of which are cellar-door sales.
