Powerful dark savoury fruit and strong compact tannin have been the hallmarks of the Rostein Shiraz to date. Handpicked in three passes over a 10 day period, fully destemmed, fermented with indigenous yeast in both oak and stainless steel fermenters, macerated for between 10 and 16 days prior to pressing. Elevage on light lees in barriques and demi-muids, 50% new for 12 months prior to racking and blending, bottled at 18 months.
