This beautiful Chardonnay is handpicked from the finest parcels from the Block A Caldwell Lane vineyard. An elegant wine that will age with grace. The fruit is selectively hand-picked into slotted bins and Tom has selected premium french oak barrels (20% new) to age this signature wine and heighten fruit characteristics and deliver beautiful round oak flavours in the wine. Winemaking The fruit after picking goes into the coolroom for 36 hours to chill. It is then gently pressed to tank and allowed to settle for 24 hours before transferring to oak. It undergoes wild fermentation in French Barrel Hogshead (20% new) and is sulphured at completion. The wine is matured in barrels for 9 months with some limited lees stirring. Colour Yellow-Green Straw. Aromas White Peach, noughat. Touch reductive. Palate Green apple and white melon & Gooseberry. Fine acid.
