SEASON Mild dry growing season, timely spring rain, slow ripening, terrific flavour development. Outstanding Shiraz year with perfume and violets. TASTING NOTES Medium with purple edge. Bright, dark fruited, aromatic, graphite. Violets, waves of ripe tannin, textural and supple. WINE STYLE Shiraz is one of the most compelling and grown up wines that the Yarra Valley produce. Most informed wine visitors taste the Syrah style and comment on their ethereal European style. Fruit driven, spice, graphite, gentle and textural. WINEMAKING A combination of whole bunch and whole berry is tipped into open fermenters. Some foot plunging at the beginning is followed by judicious extraction by turnover and plunging. 20 days of maceration and fermentation with Indigenous yeast. Pressed, settled overnight and filled to barrel with gravity. Matured for 12 months in used 500L and 2300L casks. WINE ANALYSIS Alc/Vol: 13.5%, pH: 3.61, TA: 6.2g/L CELLARING Destined for 5-10 years in the cellar for those who are patient. Lot of smoky wood char and sulphides muddling the nose and palate. But there is sweet fruit, a pepper-spice mix and a coolness throughout.
