Ocarina is Steve Flamsteed toying with ceramic egg fermenters. The fruit is sourced from the five single-vineyards (Sexton, Tarraford, Applejack, Wombat Creek and Gruyere Farm), pressed to egg (parcellated), sealed after fermentation, then - after a suitable gestation period - hatched to be settled and blended. The result is a Chardonnay with a distinctly different texture than the other Giant Steps wines - softer, milkier, its peaks and troughs less obvious.
