Cold night-time temperatures were a prominent feature of harvest 2022, causing elevated natural acidity to occur in the vineyard. Warm sunny days created ideal conditions for flavour development and even ripening. The Sauvignon Blanc fruit was harvested at peak flavour ripeness then processed and fermented cold to ensure the retention of delicate fruit aromas. After fermentation, sulphur was added to restrict malolactic fermentation before cold stabilisation, earth filtration and bottling.
