L.A.S. Vino Cabernet Sauvignon 2021

The Vineyard 

 A certified organic and biodynamic site at the northern end of the cape. For the previous few years the vineyard had been completely unkept and unpruned with no trellising. The vines sprawl everywhere where pigs, geese, guineafowl and cows roam free.

 

The site faces north with a little creek running through the middle of the vineyard. Native flowers and plants grow under the rows with no herbicides or pesticides sprayed. It is one of only four certified biodynamic vineyards in the region and was one of the first to receive Demeter certification.

 

Winemaking

The fruit was hand-picked and cooled, followed by bunch and berry sorting by hand. This led to to an almost black cavier apparence of fruit in the fermenters.  The fruit was naturally fermented as whole berries in large format barriques for 20-30 days. Plunged by hand and left to ferment at ambient cellar temperature with skins and seeds for 20-30 days prior to pressings directly back to the same barrels the wine fermented in.

 

The wine matured for 13 months in barrique and 3 months in tank prior to bottling. No fining and a light filtration (vegan friendly).

 

The Wine

A smooth, rich full bodied wine with dark rich fruit flavours of blackberry, blueberry strawberry and raspberry. Layers and layers of silky tannin through the extended maceration. A wine that can be put down for at least 10 years and comes into its own by decantering. A cabernet without comparison in Margaret River.

"Lots of sweet dark, black fruit with dark chocolate. Brooding and ripe. There’s intensity but also a certain lightness, effortless on the palate. Sweet core of stewed spiced currants and plums, sage, Chai tea, coffee, cola. And even though it reads sickly sweet, it’s not. It’s all well-balanced. Tannins are soft at first and then a bit sharp, but not unpleasant, volcanic pumice-type of texture. Excellent feeling. It’s long-lasting flavour, it’s very satisfying, it’s very good. The type of elegant sweetness, where there’s tension and structure to complement the ripeness of the fruit. Impressive stuff. And very tasty."

Coffee bean and black licorice flavours come through clear and strong, supported by boysenberry and redcurrant, highlighed by mind and tobacco. "This super-concentrated cabernet is the product of just one barrel- yes, it was a very small crop. Loaded with dark fruit displaying those blackcurrant, blackberry and slight mulberry blue fruit characters. A lift of bay leaf adds to the nose while some dark notes of black olive emerge. Grainy tannis add purpose to the palate while the oak is harmoniously positioned."

'Deep ruby to black core, rich purple rim. Blackberry, crushed ironstone and tobacco leaf aromatics. A medium-weighted red but with distinct intensity and tannin drive. Goes incredibly long with dark berry fruits and savoury ironstone minerality. Will be fascinating to see it unfurl over time'
